1 cup bulghur wheat (fine)
1 1/2 cups boiling water
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 cup good olive oil
3 1/2 teaspoons salt
1 cup minced scallions, white and green parts (1 bunch)
1 cup chopped fresh mint leaves (1 bunch)
1 cup chopped flat-leaf parsley (1 bunch)
1 hothouse cucumber, unpeeled, seeded, and medium-diced
2 cups cherry tomatoes, cut in half
1 teaspoon freshly ground black pepper
Place the bulghur in a large bowl, pour in the boiling water, and add the lemon juice, olive oil, and 1 1/2 teaspoons salt. Stir, then allow to stand at room temperature for about 1 hour.
Add the scallions, mint, parsley, cucumber, tomatoes, 2 teaspoons salt, and the pepper; mix well. Season, to taste, and serve or cover and refrigerate. The flavor will improve if the tabbouleh sits for a few hours.

Ingredients:
2 cups of fine bulgur
2 cups of hot water
1 and 1/2 tbsp tomato paste
1/2 cup olive oil
juice of 1 small lemon
2 tsp red pepper flakes
1 tsp ground black pepper
1/2 bunch green onions,finely chopped
1 bunch parsley, finely chopped (do not use flakes)
2 cucumbers, finely chopped
3 tomatoes chopped in bite size pieces
Romaine lettuce leaves
Instructions:
-Put tomato paste in a large bowl and melt with the boiling hot water.
-Add bulgur and 1 tsp salt into this mix.
-Stir and cover with a cloth.
-Let it soak the hot water for 10 minutes. Fluff bulgur with a fork.
-Add next four ingredients. Mix well. Add spring onions, cucumber, and parsley. Mix gently.
-Top with tomatoes.
-Serve the kısır on a bed of lettuce leaves.

Kisir is just like taboulehbut much spicier. Made with a red pepper paste, it's almost like couscous, but with a kick. Serve with pita an appetizer, snack, or a small meal.
INGREDIENTS:
1 1/2 cups bulghur wheat (fine or medium grade)
1 bunch green onions, chopped
1 cucumber chopped
1 tablespoon fresh dill
2 tablespoons parsley
juice from 1 lemon
2 medium tomatoes, chopped
1 red bell pepper, seeded and chopped
3 tablespooons red pepper paste or tomato paste
1/4 teaspoon salt
1/2 teaspoon black pepper
red pepper to taste
boiling water

PREPARATION:
In a bowl, place bulgur wheat with enough boiling water to cover. Allow to sit for about 15 minutes. This is a good time to chop veggies if you haven't done so already.
Combine red pepper/tomato paste with veggies, herbs and spice. Mix well.
Drain bulghur wheat from water and place on towel and squeeze out excess water. Combine with red pepper paste and mix well.
Cover and refrigerate a few hours before serving. Serve with grape leaves, romaine lettuce leaves, and fresh pita bread.

Turkish Tabbouleh (or kisir in Turkish) is very common as a salad for gatherings. Usually served with lettuce leaves.

The recipe makes for 4 servings and takes about 20 minutes to prepare.
Ingredients:
2.5 cups of fine bulgur (#1 or #2)
1 medium onion (finely chopped)
3 tbsp of olive oil
3 tbsp of tomato paste
1/2 tbsp salt
1/2 cups of water
1 medium tomato (finely chopped)
5 scallion (finely chopped)
1/2 cups chopped cucumber
1/4 cups chopped parsley (or 1 tbsp dry parsley flakes)
2 tbsp lemon juice
spices and herbs (black pepper a must)
lettuce (optional)
hot sauce (optional)
1. Wash and drain the bulgur.
2. Saute the onion with olive oil and salt.
3. When the onions become golden (may add 1/2 tsp of sugar for more caramel color) add tomato paste and water and bring to boil while stirring.
4. Pour the hot onion sauce onto washed bulgur and cover it for 10 minutes.
5. Mix all of the ingredients.
Serve with the lettuce.

1 cup loosely packed flat-leaf parsley, finely chopped
3 tablespoons olive oil
2 teaspoons red pepper flakes
1/2 teaspoon salt
1 tablespoon pomegranate juice (or 2 tablespoons lemon juice) **
Salad greens or boiled grape leaves
Tomato slices
Pickles
Put the bulgur in a bowl and stir in the water, a few spoonfuls at a time. Cover and let rest for 15 minutes at room temperature. Add onion to bulgur and combine thoroughly. Then stir in the other ingredients, seasoning to taste. Line a serving dish with salad greens or boiled vine leaves and top with the bulgur mixture. Garnish with sliced tomatoes or pickles. Serve at room temperature.
* Be sure to use bulgur, not cracked wheat.
** Can substitute pomegranate syrup, diluted 1 tablespoon to 1 cup water.
